Cassia oil is extracted from Cinnamomum cassia of the Lauraceae family. This evergreen tree is native to China and Burma and is generally known as Chinese Cinnamon. This slim, Cassia tree grows up to 20 meters high, with thick, rubbery leaves and small white flowers. The flowers are followed by single-seeded berries the size of small olives. Cassia bark is commonly used to flavor curries, in baked foods, candies and soft drinks.
